Here’s a very easy but very yummy recipe for a basic roll out cookie dough. I love rolled cookies, mostly because I have a whole collection of cookie cutters that I just love using. I have the basics like hearts, flowers and rounds – and then I have cookie cutters that are a little more adventurous like (gingerbread) men, hippos and cupcakes. The funner the, well, more fun! :) You can spice up these cookies by adding some extra spice or herbs. I made vanilla cookies, cinnamon cookies and cardamon cookies with this recipe.
This recipe was adapted from the roll out cookie recipe from the wonderful Glorious Treats website, but the link to the original recipe seems to be broken! Check out the website though, lots of great recipes and wonderful decoration inspiration!
3 cups of (all-purpose) flour
1 teaspoon of baking powder
1 cup (220grams) of butter at room temperature
1 cup of sugar
1 large egg
1/2 vanilla bean – for the vanilla cookies
1 1/2 teaspoon of ground cinnamon – for the cinnamon cookies
1 teaspoon of ground cardamon – for the cardamon cookies
What to do
(As always: you can use vanilla extract, but I like to use fresh vanilla from a vanilla bean: Half the bean and scrape out the seeds. If making a whole batch of vanilla cookies: use the whole bean, if only making 1/3rd of the batch vanilla use 1/3rd to 1/2 of the bean. Rub your seeds into the sugar (either into the whole cup, if making a whole batch of vanilla cookies, or 1/3rd cup if only making 1/3rd of the cookies vanilla – I’m sure you get it!)
I will give instructions for how to make a whole batch of cookies with one flavor. If you want to make all three, just divide all the ingredients by three and make the dough separate for every spice you’re adding.
01. Mix together your butter (at room temperature) and sugar until smooth and creamy.
02. Add your spice and egg, mix well
03. Combine flour and baking powder and sift into the butter mixture 1 cup at a time. Carefully fold into the butter mixture with a spatula
04. Wrap dough in foil and let set in the fridge for two hours, or the freezer for half an hour
05. Roll out, cut out cookies with cookie cutters ;)
06. Bake for 7 minutes in a (preheated) 170°C oven!
I used three different cookie cutter to differentiate between the flavors (the vanilla is the only spice you can see in the cookie.) Another thing you can do is use food color to give every cookie a different color :)
