Are you guys watching The Great British Bake Off this season? I haven’t seen all the episodes but I’m liking what I’ve seen! I promise I do more with my life than just watch TV (I promise) but this recipe just happens to be one from a TV show again. Except this time I got it in a book – from the show. The Great British Bake Off: How to turn everyday bakes into showstoppers – wow, that’s a mouth full! Anyway, I was in the mood to bake and came across this recipe. The combination of pear and marzipan (almonds) is a great one, and I kind of just really wanted to try that fancy leaf-edge this pretty pie has. I served it with sweet whipped cream and it was pretty amazing!

Ingredients for the pie crust

300 grams of flour
pinch of salt
3 tablespoons of (caster) sugar
175 gram butter
1 egg
1 tablespoon of icy water

What to do

In a food-processor: put the flour, salt and sugar in and pulse to mix. Add the butter (chilled and diced) and process until you get fine crumbs. Add the egg and the ice water and mix until you get a dough that can be kneaded into a dough. You might want to chill a little before rolling it out.

Take 3/5th of the dough, roll out and line a 23cm low pie tin. Don’t trim off the edges and chill while you make the filling

Ingredients for the filling

112 grams of ground almonds
112 grams of powdered sugar
(Alternatively use 250 grams of marzipan)
100 grams of butter
2 tablespoons of flour
2 eggs
4 large pears
caster sugar (for sprinkling)

What to do

Either mix the ground almonds and the powdered sugar with a tiny bit of water to make your own marzipan, or buy ready made marzipan. Add this, alongside the butter, to the food processor and mix until you get a smooth batter. Add the flour and eggs, process until you have a creamy mass. Spoon this into your (chilled) lined pie tin.

Peel, quarter and core the pears – cut them in two or three pieces. Pot these on top of the almond mixture.

Roll out the 2/5th of the pastry that’s left over and cover the filling. Use water on the edges so the bottom and top of the pastry stick together. Decorate like you want to.

Bake your pie in a preheated oven at 190°C for 40 to 45 minutes. Once you’ve removed it sprinkle with the sugar et voila! Serve with whipped cream, om nom nom!
