Moelleux au chocolat (lava cake)


If you’re still looking for a Valentine’s Day recipe to please your girl/boy/person, a friend, the members of your family – or yourself: look no further! This chocolate cake with a gooey center is the perfect thing. It’s very easy to make and it’s chocolate. Pretty much a guaranteed success!

Moelleux au chocolate – Jeroen Meus

2 eggs + 2 yolks
100 grams of sugar
50 grams of flour
100 grams of chocolate (I used 50 grams of 72% and 50 grams of 52%)
110 grams of butter

What to do: with a handheld mixer, mix together the eggs, yolks and sugar. Sift in the flour and mix until incorporated with a spatula. Melt together the butter and chocolate (in the microwave or au bain-marie.) Mix the chocolate/butter into the dough with your spatula – make sure your chocolate isn’t hot though, so you don’t cook your eggs! Put your mixture into a piping bag and put it away in the fridge until you’re ready to eat!

Pipe mixture into greased/floured molds (2/3rds of the way) and bake in a pre-heated oven of 210°c (190°c fan) and bake for 8-10 minutes. If you over bake a lava cake it won’t have a runny center and won’t be a lava cake. So take care!
