Easter cupcakes

My mom came home with these marshmallow chicks a couple of weeks ago. She was completely over the moon over them. “You can use them to decorate some cupcakes,” she said, “When Easter comes around.” But how could she not love ’em? Look at them. They’re adorable. That’s probably one of my favorite things about Easter, baking things and making them look and feel all spring-y. All the colors and all the chocolate. Amazing!

I’m hoping to bake a couple of more things this week to celebrate Easter. We don’t really have a big family thing planned this year, but that doesn’t mean I can’t make the most of it! I’m thinking Easter Egg shaped (and decorated) cookies. Maybe a pie? I’ll keep you posted! But for now I hope you enjoy the pictures I took of these cupcakes!

I hope everyone had a good Valentine’s Day weekend – or, if you don’t really celebrate it, just a regular good weekend, then. Good weekends are all about sleeping in, taking time for yourself to relax and maybe get one or two things done. Weekends also about cupcakes. Or they should be, at least. Cupcakes were without a doubt my first real baking love, and I’ve never quite gotten over them, or over how much fun it is to frost and decorate them.

These particular cupcakes were made using a regular pound-cake recipe. The mini!cupcake pan is new so I was excited to test it out (anything miniature sized is bound to be amazing). I added slices of apple to the regular sized cupcakes, and then added cinnamon to my buttercream. Apple and cinnamon are the best of friends, and the frosting was extremely yummy.

Hello everyone! I would like to say a big thank you to everyone who liked my posts this past year, and a heartfelt you’re awesome, thanks so much to everyone who decided to follow my blog. I’m very excited to see that people like what I have to post – and I hope I can post lots more in 2014 :) I hope that you’re all spending Christmas with people you love, doing things that you love. I’d also like to wish you all that your heart desires for 2014! Make it a really great year.

I baked these cupcakes for my brother. He’s spending the evening with his friends, having a Christmas dinner party. I like how they turned out – so very festive! I also made them tiramisu, which ended up being so very very yummy. I drenched the finger biscuits in a coffee amaretto syrup, and the mascarpone cream was made with an Italian meringue and a pâte-à-bombe. So good :) but not the point of this post! This a post about cupcakes!

My cupcake recipe can be found here; and I found the buttercream recipe in my copy of The Great British Book of Baking! (Bring 85 grams of sugar and 4 table spoons to 110°C – poor in a thin stream onto 2 lightly whisked egg yolks while mixing with a hand mix. Keep mixing until the mixture is cold. (It’ll be thick and light.) Continue mixing and gradually add 150 grams of very soft butter. Add flavoring if you’d like – I added sweetened cocoa powder for hot cocoa (yum) to make the chocolate buttercream.)

I saw this blog post down at Raspberri Cupcakes about chocolate-chip cupcakes with mini chocolate-chip cookies on top and I immediately fell in love. I love the idea of chocolate-chip cupcakes filled with chocolate-chip cookie dough (and if you do too then you should definitely check out that post, and it’s absolutely gorgeous pictures!) I decided to just go with my fool-proof vanilla cupcake recipes (that you can find here) and bake little chocolate chip cookies for on top. (A recipe post for those will follow!)

It’s been a little under a month since my last post! I didn’t mean to disappear like that, but even though I didn’t really have anything to do this summer I ended up having something to do every single day none the less. I also went on vacation to Scotland at the end of August! In May I saw the Edinburgh and Glasgow (and lots in between those two cities) and this time I saw the Highlands: Aberdeen and Inverness – and once again lots in between: Elgin, Nairn and Huntly. It was an extremely awesome – and extremely yummy trip. I had Eton Mess, Pavlova, lots of Highland Short Bread and Cranachan! Going to use some of my left-over Scotland energy to bake shortbread cookies tomorrow, but for now I bring you pictures of the apple cupcakes I made today.

When some of our friends and I went to visit Jessie in Sweden a couple of months ago she took us to this neat little store called Lagerhaus that I absolutely adore. I mostly adore it because they have a bunch of really neat baking supplies and kitchen ware. Everything is too adorable, and if I could (read: if I had all the money and luggage space in the world) I’d probably buy every single item in that store. But alas I don’t so I didn’t. That day I bought a couple of things (like pink and black paper straws and cupcake papers) and stared mournfully at a couple of other things that I couldn’t get – like this container with a see-through lid that says: “Of course it’s good, it’s made by me.”

When Jessie arrived in Belgium in the beginning of July she had some presents for me. One of them was that awesome little container. My friends are AWESOME. All good things come to an end though, and on Monday I put Jess on a plane back to Sweden. Whoever put Sweden and Belgium so far apart better knows that I am not pleased with them, not pleased at all. September should be here soon enough though, right? :)

Today I made vanilla cupcakes with a simple butter icing and pieces of mini oreo on top. Because the only thing that can make a cupcakes more awesome is a cookie on top, right?


Happy 4th of July

To all you Americans out there: Happy Fourth of July! I hope you had an amazing day with a lot of food, and watching the fireworks – and whatever it is that you do on this day!

Something else you can celebrate on the fourth of July is Steve Rogers’ birthday. I kind of warned you before that I’m sort of a geek – and here my geekiness shows through my baking once again! To be honest I’ve never really been a very big fan of superheroes. I didn’t grow up reading the comic books, and I never really liked any of the movies. (Spiderman being the big exception.) When the whole Avengers craze was going on a couple of months ago, however, some of my friends were absolutely adamant to get me into the whole craziness. I have to say that they succeeded.

A week before the Avengers movie premiered I watched all the individual avenger movies – I can’t say I enjoyed all of those, but I did really enjoy the Avengers movie, and I’ve been geeking out about it ever since. I’ve been thinking about making Avengers cupcakes for a while now. (To be fair I have to say: three-avengers-and-one-villain cupcakes.) I knew which flavors I wanted for which avengers, and I had a pretty good idea of what I wanted to do for decorations – now all I needed was the perfect occasion to bake them.

My friend Jessie is visiting from Sweden, and out little group of friends gathered today to go and see The Amazing Spiderman. (Another thing I liked to geek out over is Andrew Garfield’s face. Yeah. I like it a lot.) So today was the day!


Rainy days

How’s the weather been treating you? Here (here being Western Europe) June hasn’t been very nice to us. The end of May/Beginning of July was very warm and very sunny, but the last week has been rainy and cold. Me, I really like rain though. Mostly when I’m inside to enjoy it, but I don’t mid it all that much when I’m outside either. Today I decided to make some cupcakes to celebrate the rain, and then sun.

Because I tend to bake something at least once a week (and on a bad week – or a good week, depends on how you look at it! – I might bake three or even four different things) there have to be people to actually eat the things I make. My parents’ sweet tooth isn’t that developed and my brother is just one man (one man with a big appetite, but still only one man). That’s why a lot of it gets shipped off to my neighbors. They seem to like what I make (either that or they’re too nice to tell me otherwise) and when their daughter gave birth to their second grandchild they asked me if I could bake some stuff for the baby shower/christening. “Sure!” I said, trying not to seem too excited. Play it cool, Aline.

I asked them what they’d like and they pretty much gave me free reign. My neighbor said the baby’s daddy really liked the Walnut and Coffee gateau I made, and that it’d be nice if I made the Rhubarb Buckle again.  So that’s what I did. I also made mini!merveilleux, cupcakes, brownies and shortbread cookies. It took me a couple of days to bake and decorate everything, but at the end of the road I was super proud of everything – and this ended up being my first paid job. The praise I got afterwards was amazing, my neighbor kept telling me how good everything was – and her daughter came by as well with the cutest Thank You card. An awesome experience all around.
