Brownie peanut butter pie!

Yesterday I finished my first week of the bakery course I’ll be taking this year! Eep, super exciting! I’ll be having bakery classes, patisserie classes, classes in chocolate (and finances/marketing etc.) On our second day we made pralines, and yesterday we baked a white loaf of bread. To say that I’m really pleased with my life right now is a bit of an understatement! To celebrate I’ll post the pictures of the brownie peanut butter pie I made for a friend last week. He was in the mood for chocolate and peanut butter, and when I saw this recipe down at Sprinkle Bakes I knew it had to be this pie!

Brown butter peanut butter cookies

English is my second language (it was supposed to be my third language but, I’m sorry French,  you’re just really hard, okay?) Sometimes this makes for funny translations. ‘Cause see, in dutch peanut butter is pindakaas – which literally means peanut cheese. Now when you say it like that, in English, it just looks and sounds weird. In dutch though, it sounds right. (Though if I could choose I think I’d go with peanut butter. Nothing really beats butter.) Incidentally it was a Dutch person who showed me the joys of eating peanut butter. Up to this day I’m not sure if I should hate her for it, or be thankful. On the one hand: peanut butter, yum. On the other: maybe one of the most fattening things I like eating.

These cookies were truly amazing. I was meeting up with some friends to go and see Brave in the movie theater. We were having a small picnic beforehand and I really wanted to bake something. These seemed easy and quick to make, so I went with them. Because we were running a little late I had to shove them in a cookie box as soon as they came out of the oven – so they never really cooled into solid cookies. Completely crumbly or not: they were still delicious.

Sometimes the urge to bake cookies can’t be tamed just by browsing through your favorite blogs, looking for recipes. Sometimes you just have to give in and bake something. The biggest question then is always: exactly what will I bake? On Saturday my brother from another mother got back from his vacation (are people still saying brother from another mother? Well, they should and I am, apparently) and I let him choose. I told him he could either have peanut butter cookies, chocolate (chip) cookies or oatmeal cookies. He chose oatmeal. Good choice. (Especially since the oatmeal cookies kinda sorta also had peanut butter and chocolate in them. Miracle cookies, really.)

The cookies came out really, really lovely. They were chewy and had a beautiful oatmeal flavor, and creamy peanut butter :) this one was a real winner. When my real brother (you know, from the same mother and father) got home from his vacation yesterday I gave him one. The first bite was met with lots of “hmmm!” and “yum!” but the second bite was met with a horrified: “There’s peanut butter in this?” Of course I have the luck to have a brother who doesn’t like peanut butter. (He finished the cookie anyway.)
